Ingredients

The Korean BBQ Beef

  • 2 lbs. top sirloin
  • 2 pears, peeled and cut into chunks
  • 2 inches knob of ginger
  • 4 cloves garlic
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon sesame oil

The Burritos

  • cooked rice
  • cilantro, basil, green onions, maybe even mint
  • kimchi
  • sriracha mayo or yum yum sauce
  • large flour tortillas

Instructions

  1. Slice the beef thinly and pulse the pear, garlic, and ginger in a food processor.
  2. Combine all ingredients for the beef in a slow cooker and cook on high for 3-5 hours until tender.
  3. Prepare burrito fillings by cooking the rice, mincing herbs, and preparing the sauce.
  4. Lay a flour tortilla flat on foil, add rice, meat, herbs, kimchi, and sauce in the center.
  5. Fold the sides of the tortilla and roll it up from front to back, wrapping in foil if saving for later.
