Ingredients

The beans

  • 28 oz traditional baked beans

The meat

  • ½ lb pork belly or thick-cut bacon

The vegetables

  • 1 cup sweet onions, chopped

The sweeteners and sauces

  • ¼ cup brown sugar
  • 1 tbsp pineapple juice or apple juice
  • 2 tsp molasses
  • 2 tsp ketchup
  • 2 tsp barbeque sauce
  • 1 tsp dijon mustard or yellow mustard

The spices and oils

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 tsp smoked paprika or sweet paprika

Instructions

  1. Preheat the smoker to 225 degrees.
  2. Pat dry the pork belly or bacon and chop into ¼ inch slices, then season with smoked paprika.
  3. Heat a 10-inch cast iron pan over medium-high heat and add olive oil and butter.
  4. Once the butter has melted, add the seasoned pork belly and brown it for 5 minutes.
  5. Add the chopped onion and cook until tender, about 3-4 minutes, then remove from heat without draining the grease.
  6. In a large bowl, combine baked beans, brown sugar, molasses, honey, mustard, ketchup, and pineapple juice, and mix well.
  7. Add the bean mixture to the cast iron pan with the pork belly and onions, and stir to combine.
  8. Add wood chips to the smoker and place the cast iron pan in the smoker uncovered for 60 minutes.
  9. Stir the beans and return to the smoker, cooking for an additional 90 minutes, adding more wood chips as desired.
  10. Remove from the smoker and serve.
