Instructions
- Preheat the smoker to 225 degrees.
- Pat dry the pork belly or bacon and chop into ¼ inch slices, then season with smoked paprika.
- Heat a 10-inch cast iron pan over medium-high heat and add olive oil and butter.
- Once the butter has melted, add the seasoned pork belly and brown it for 5 minutes.
- Add the chopped onion and cook until tender, about 3-4 minutes, then remove from heat without draining the grease.
- In a large bowl, combine baked beans, brown sugar, molasses, honey, mustard, ketchup, and pineapple juice, and mix well.
- Add the bean mixture to the cast iron pan with the pork belly and onions, and stir to combine.
- Add wood chips to the smoker and place the cast iron pan in the smoker uncovered for 60 minutes.
- Stir the beans and return to the smoker, cooking for an additional 90 minutes, adding more wood chips as desired.
- Remove from the smoker and serve.
