Whole Wheat English Muffin Bread

Ingredients

  • cups whole wheat flour
  • cups all purpose flour
  • 2 tablespoons vital wheat gluten flour
  • 1 tablespoon light brown sugar
  • 1 tablespoon instant yeast
  • teaspoons kosher salt
  • ¼ teaspoon baking soda
  • 1 cup skim milk
  • ¼ cup water
  • 2 tablespoons extra virgin olive oil
  • to taste none cornmeal for sprinkling

Instructions

  1. Grease a loaf pan and dust with cornmeal.
  2. Whisk together the dry ingredients in a bowl.
  3. Warm the milk, water, and oil to the temperature recommended by the yeast manufacturer.
  4. Pour the warm liquid over the dry ingredients and beat on high for one minute.
  5. Transfer the dough to the prepared pan and press it evenly.
  6. Cover with greased plastic wrap and let rise in a warm place for about 1 hour.
  7. Preheat the oven to 400°F.
  8. Bake for 22 to 27 minutes until golden brown and the internal temperature reaches 185°F to 190°F.
  9. Cool in the pan for 5 minutes, then turn out onto a cooling rack and cool completely before slicing.
