Best Red Salsa
Ingredients

diced fire-roasted tomatoes (15 ounces)

garlic, roughly chopped

white onion, roughly chopped (about ½ small onion)

fresh cilantro leaves, lightly packed

jalapeño, seeds and ribs removed, and roughly chopped

lime juice, more if needed

fine sea salt
Instructions
- Drain about half of the tomato juice from the can and discard it.
- In a food processor, pulse the garlic to chop it finely.
- Add the tomatoes and remaining juice, onion, cilantro, jalapeño, lime juice, and salt to the food processor.
- Process the mixture until mostly smooth, scraping down the sides as necessary.
- Adjust seasoning with additional lime juice and salt if needed.
- Serve immediately or store in the refrigerator for up to 10 days.
