Ingredients

  • 1 can diced fire-roasted tomatoes (15 ounces)
  • 1 clove garlic, roughly chopped
  • ½ cup white onion, roughly chopped (about ½ small onion)
  • ¼ cup fresh cilantro leaves, lightly packed
  • ½ medium jalapeño, seeds and ribs removed, and roughly chopped
  • 1 tablespoon lime juice, more if needed
  • ½ teaspoon fine sea salt

Instructions

  1. Drain about half of the tomato juice from the can and discard it.
  2. In a food processor, pulse the garlic to chop it finely.
  3. Add the tomatoes and remaining juice, onion, cilantro, jalapeño, lime juice, and salt to the food processor.
  4. Process the mixture until mostly smooth, scraping down the sides as necessary.
  5. Adjust seasoning with additional lime juice and salt if needed.
  6. Serve immediately or store in the refrigerator for up to 10 days.
