Pork Rind Nachos

Ingredients

The taco meat

  • ½ pound lean ground beef
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup water

The nachos

  • 1 2.5-ounce bag pork rinds
  • 8 ounces shredded fresh pepperjack cheese or shredded fresh monterey cheese

Suggested toppings (optional)

  • as desired guacamole
  • as desired sliced jalapeños
  • as desired pico de gallo
  • as desired chopped fresh cilantro
  • as desired sour cream or crema

Instructions

  1. Cook the ground beef in a skillet over medium-high heat until browned, breaking it into crumbles.
  2. Add the spices and water to the beef, stirring to combine, and simmer until the liquid evaporates.
  3. Preheat the broiler and arrange half of the pork rinds on a baking sheet.
  4. Layer half of the cheese and then half of the taco meat over the pork rinds.
  5. Add the remaining pork rinds, then top with the rest of the cheese and taco meat.
  6. Broil the nachos until the cheese melts, being careful not to burn the pork rinds.
  7. Add desired toppings and serve immediately.
