Pulled Pork Nachos

Ingredients

  • 1 ½ cup Tortilla chips
  • 1 ½ cup shredded Pepper Jack cheese
  • ¾ cup Kalua Pork, chopped into bite-size pieces
  • 3-4 tablespoons drained and diced pepperoncini
  • 2-3 strips bacon, cooked and crumbled
  • 2-3 tablespoons chopped red onion
  • 2-3 tablespoons chopped fresh cilantro
  • to taste sour cream

Instructions

  1. Preheat the oven to 350°F.
  2. Place a single layer of tortilla chips on an oven-safe plate.
  3. Top with a heaping ¾ cup of shredded cheese.
  4. Add the chopped Kalua pork over the cheese.
  5. Sprinkle with diced pepperoncini.
  6. Break up a handful of tortilla chips into large pieces and sprinkle them on top.
  7. Add the remaining cheese on top.
  8. Top with crumbled bacon and chopped red onion.
  9. Bake in the oven until the cheese is melted.
  10. Remove from the oven and sprinkle with chopped cilantro and dollops of sour cream.
  11. Serve immediately.
