Ingredients

The nachos

  • ½ x foil (plus optional parchment paper)
  • 2 tablespoons olive oil
  • cup onion (chopped)
  • 1 pound ground pork (or beef)
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon oregano
  • ½ teaspoon salt
  • ½ lime juiced
  • 8 ounces tortilla chips
  • 2 cups Monterey Jack cheese (freshly grated)

Optional toppings

  • to taste pico de gallo or salsa
  • to taste cilantro
  • to taste diced hot peppers
  • to taste sour cream
  • to taste avocado or guacamole
  • to taste diced red onion

Instructions

  1. Preheat the grill to medium-high or the oven to 350°F.
  2. Cut 8 large pieces of foil and layer two pieces per packet in a plus sign shape.
  3. Heat olive oil in a skillet and cook the chopped onion until soft.
  4. Add the ground pork or beef to the skillet and cook until browned, draining fat if desired.
  5. Season the meat with chili powder, cumin, oregano, and salt, then stir in lime juice.
  6. Evenly distribute tortilla chips on the foil, then top with the cooked meat and grated cheese.
  7. Fold the foil packets securely, making sure to punch holes in the top to prevent sogginess.
  8. Cook the packets on the grill or in the oven for about 10 to 12 minutes until the cheese is melted.
  9. Carefully open the packets, add optional toppings, and serve.
