Easy Vegan Omelette

Ingredients

  • ½ cup vegan egg
  • ½ cup veggies of choice
  • ¼ cup dairy free cheese
  • ¼ cup protein of choice
  • ¼ teaspoon sea salt
  • teaspoon pepper
  • to taste none sliced green onions (optional)

Instructions

  1. Sauté the veggies in a small omelet pan with oil or broth, adding greens last.
  2. If using a protein that needs cooking, add it with the veggies.
  3. Warm the dairy-free cheese with the cooked veggies to help it melt.
  4. Pour the vegan egg into the same pan and cook over medium-low heat.
  5. Allow the egg to firm up, then carefully flip it.
  6. Once firm, add the cooked veggies, cheese, and protein to one half of the egg.
  7. Cook until the cheese melts and the bottom is browned.
  8. Slide the omelette onto a plate and fold it over to serve.
