Easy Vegan Omelette

Instructions
- Sauté the veggies in a small omelet pan with oil or broth, adding greens last.
- If using a protein that needs cooking, add it with the veggies.
- Warm the dairy-free cheese with the cooked veggies to help it melt.
- Pour the vegan egg into the same pan and cook over medium-low heat.
- Allow the egg to firm up, then carefully flip it.
- Once firm, add the cooked veggies, cheese, and protein to one half of the egg.
- Cook until the cheese melts and the bottom is browned.
- Slide the omelette onto a plate and fold it over to serve.
