Ingredients

The omelette

  • 1 tablespoon olive oil
  • 2 large eggs
  • 1 tablespoon almond milk
  • teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 1 tablespoon cheese
  • 2 tablespoons black beans
  • 2 tablespoons red pepper, diced
  • ¼ cup arugula

Optional toppings

  • Hot Sauce
  • Greek Yogurt

Instructions

  1. Heat a small to medium-sized fry pan over medium/high heat and add olive oil.
  2. In a small bowl, beat the eggs and almond milk together, then add garlic powder, salt, and pepper.
  3. Once the pan is hot, pour in the egg mixture and reduce the heat to medium. Add cheese on top.
  4. Cover the pan and let the egg mixture cook, occasionally separating the edges with a spatula to prevent sticking.
  5. When the eggs are nearly set, add the remaining ingredients to one half of the omelette and fold the other half over the veggies.
  6. Cook for an additional 2-3 minutes, then remove from heat.
  7. Serve topped with your choice of hot sauce and Greek yogurt.
