Easy Veggie Omelette

Instructions
- Heat a small to medium-sized fry pan over medium/high heat and add olive oil.
- In a small bowl, beat the eggs and almond milk together, then add garlic powder, salt, and pepper.
- Once the pan is hot, pour in the egg mixture and reduce the heat to medium. Add cheese on top.
- Cover the pan and let the egg mixture cook, occasionally separating the edges with a spatula to prevent sticking.
- When the eggs are nearly set, add the remaining ingredients to one half of the omelette and fold the other half over the veggies.
- Cook for an additional 2-3 minutes, then remove from heat.
- Serve topped with your choice of hot sauce and Greek yogurt.
