Vegan Egg Scramble

Ingredients

The base

  • 1 cup vegan egg

The veggies

  • 2 cups veggies of choice

The cheese

  • 1 cup dairy free cheese

The protein

  • 1 cup protein of choice

Seasonings

  • ½ teaspoon sea salt
  • ½ teaspoon pepper
  • to taste sliced green onions (optional for garnish)

Instructions

  1. Sauté the veggies with oil or broth and seasonings in a pan over medium heat until tender.
  2. Set the sautéed veggies aside.
  3. In the same pan, cook the vegan egg according to the recipe instructions, scrambling as it cooks.
  4. Once the vegan egg starts to firm up, add the cooked veggies, cheese, and protein back into the pan.
  5. Mix everything together for a few more minutes until the cheese melts.
  6. Serve the scramble warm.
