Ingredients

The steak

  • 4 pieces New York strip steaks (8-10 ounces each)

The cooking essentials

  • tablespoons neutral flavored oil (corn, safflower, canola, grapeseed, or peanut oil)
  • to taste salt
  • to taste pepper

The garlic butter

  • 4 tablespoons butter
  • 4 cloves garlic (smashed)
  • 5 sprigs fresh thyme

Instructions

  1. Let the steaks sit at room temperature for 20 minutes.
  2. Preheat the oven to 450°F.
  3. Season the steaks on both sides with salt and pepper.
  4. Heat a heavy pan over high heat and add the oil.
  5. Place the strip steaks in the pan in a single layer.
  6. Cook for 3-4 minutes per side until deep golden brown.
  7. Add the butter to the pan and let it melt, then add the garlic and thyme.
  8. Spoon the butter mixture over the steaks.
  9. Insert a probe thermometer into the thickest part of one steak.
  10. Place the pan in the oven and bake for 5-7 minutes until the thermometer registers 140°F for medium.
  11. Remove the pan from the oven and let the steak rest for 5 minutes.
  12. Spoon the pan drippings over the steak, then slice and serve immediately.
