New York Strip Steak with Garlic Butter

Instructions
- Let the steaks sit at room temperature for 20 minutes.
- Preheat the oven to 450°F.
- Season the steaks on both sides with salt and pepper.
- Heat a heavy pan over high heat and add the oil.
- Place the strip steaks in the pan in a single layer.
- Cook for 3-4 minutes per side until deep golden brown.
- Add the butter to the pan and let it melt, then add the garlic and thyme.
- Spoon the butter mixture over the steaks.
- Insert a probe thermometer into the thickest part of one steak.
- Place the pan in the oven and bake for 5-7 minutes until the thermometer registers 140°F for medium.
- Remove the pan from the oven and let the steak rest for 5 minutes.
- Spoon the pan drippings over the steak, then slice and serve immediately.
