Ingredients

The steak

  • 2 pieces New York Steaks (10-12 ounces each)

The seasoning and cooking fat

  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon olive oil
  • 3 tablespoons butter

The aromatics

  • 4 cloves garlic (whole)
  • 4 sprigs rosemary (fresh)
  • 2 sprigs thyme (fresh)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Season the steaks with salt and pepper on both sides and let them sit at room temperature for 5 to 30 minutes.
  3. Heat a cast iron skillet over high heat, then add olive oil, butter, garlic, rosemary, and thyme, cooking for 2-3 minutes to infuse the flavors.
  4. Add the steaks to the pan and sear for 3 minutes on each side until a crust forms.
  5. Transfer the skillet to the oven and cook the steaks for an additional 6 minutes, or until desired doneness.
  6. Remove from the oven and let the steaks rest for about 5 minutes before slicing and serving.
