Instructions
- Mix together the peanut butter, eggs, coconut sugar, cane sugar, and vanilla extract in a large bowl until smooth.
- Add the oats, baking soda, sea salt, M&M’s, and chocolate chips to the mixture and combine well.
- Refrigerate the dough for 30-45 minutes.
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Form 3 jumbo cookies per baking sheet, shaping them into round circles with your hands.
- Top each cookie with additional M&M’s and chocolate chips if desired.
- Bake for 11-13 minutes, then let them sit for a few minutes to firm up before enjoying.
