Instructions
- Wash and trim the green beans, cutting them on the bias for a pleasing appearance.
- If using garlic or shallots, mince them and roll the lemon on the counter to make squeezing easier.
- For the microwave method, place the green beans in a microwave-safe dish with 1-2 tablespoons of water, cover, and microwave for 2-3 minutes until almost crisp-tender.
- Drain the water and stir the beans, leaving them uncovered to release steam.
- For the traditional method, boil water, add the green beans, and cook until crisp-tender, then plunge into ice water to stop cooking.
- In a large sauté pan over medium heat, add butter and almonds, cooking until the almonds begin to brown.
- Add the green beans (and garlic or shallots if using) and stir to coat in the butter.
- Warm the beans through, squeeze lemon juice over the top, season with salt and pepper, and serve.
