Ingredients

The green beans

  • 1 pound trimmed green beans

The sauce

  • 4 tablespoons butter
  • ¼ cup flaked or slivered almonds
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper

Optional ingredients

  • 1 tablespoon shallots, minced
  • 1 clove garlic, minced

Instructions

  1. Wash and trim the green beans, cutting them on the bias for a pleasing look.
  2. If using garlic or shallots, mince them and roll the lemon on the counter to make squeezing easier.
  3. For the microwave method, place the green beans in a microwave-safe dish with 1-2 tablespoons of water, cover, and microwave for 2-3 minutes until almost crisp-tender.
  4. Drain the water and leave the beans uncovered to release steam.
  5. For the traditional method, boil water, add green beans, and cook until crisp-tender, then plunge into ice water to stop cooking.
  6. In a large sauté pan over medium heat, add butter and almonds, cooking until the almonds begin to brown.
  7. If using shallots or garlic, add them now and stir until fragrant.
  8. Add the green beans to the pan, stir to coat in the butter, and warm through.
  9. Squeeze lemon juice over the beans, season with salt and pepper, and serve.
