Buttery Dill Fried Halibut

Ingredients

The fish

  • ¾ to 1 lb halibut, cut into individual servings

The coating

  • 1 cup tapioca flour
  • 3-4 tbsp dill (fresh if available)
  • 1 tbsp salt
  • 1 tbsp pepper

The cooking fat

  • 2 tbsp Kerrygold butter

Instructions

  1. Prepare the flour coating mixture by mixing the tapioca flour, dill, salt, and pepper on a plate.
  2. Dredge the halibut through the flour mixture, coating evenly on both sides.
  3. Heat a frying pan over medium-high heat and melt the butter.
  4. Gently place the coated halibut into the pan and fry for about 6 minutes until a good brown crust forms.
  5. Flip the fish to cook the other side until completely cooked through.
  6. Remove the fish from the pan and serve with your choice of sides.
