Instructions
- Slice the chicken breasts horizontally to create 6 thin pieces and pound them to ¼ inch thickness if needed.
- Season the chicken cutlets with salt and pepper.
- Dredge the chicken in grated parmesan cheese.
- Heat olive oil in a skillet and sauté the chicken cutlets until browned on both sides.
- Remove the chicken and keep warm.
- In the same pan, melt butter and sauté minced garlic until fragrant.
- Add chicken broth and lemon juice, scraping the pan to deglaze.
- Add capers and simmer until the sauce reduces by half.
- Stir in remaining butter and return the chicken to the pan to coat in the sauce.
- Serve garnished with fresh parsley if desired.
