Healthy Lemon Chicken Piccata

Ingredients

The Chicken

  • 3 8-oz Boneless skinless chicken breasts
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • cup Grated parmesan cheese
  • 2 tbsp Olive oil
  • 3 tbsp Unsalted butter

The Sauce

  • 4 cloves Garlic (minced)
  • ¾ cup Chicken broth, reduced sodium
  • ¼ cup Lemon juice
  • ¼ cup Capers (drained)
  • 2 tbsp Fresh parsley (optional, for serving)

Instructions

  1. Slice the chicken breasts horizontally to create 6 thin pieces and pound them to ¼ inch thickness if needed.
  2. Season the chicken cutlets with salt and pepper.
  3. Dredge the chicken in grated parmesan cheese.
  4. Heat olive oil in a skillet and sauté the chicken cutlets until browned on both sides.
  5. Remove the chicken and keep warm.
  6. In the same pan, melt butter and sauté minced garlic until fragrant.
  7. Add chicken broth and lemon juice, scraping the pan to deglaze.
  8. Add capers and simmer until the sauce reduces by half.
  9. Stir in remaining butter and return the chicken to the pan to coat in the sauce.
  10. Serve garnished with fresh parsley if desired.
