Ingredients

The turkey and aromatics

  • 3 pound Boneless Turkey Breast
  • 1 unit Yellow Onion, cut into 4 wedges, peel on
  • 1 head Garlic, top ¼ cut off to expose the garlic
  • 3 sprigs Thyme
  • 2 sprigs Rosemary

The rub

  • ¼ cup Salted Butter, room temperature
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ teaspoon Ground Sage

The gravy

  • 2 cups Turkey Drippings
  • 2 tablespoons Cornstarch
  • ¼ cup Chicken Broth

Instructions

  1. Prepare the crockpot by buttering it or lining it with a liner.
  2. Place onion wedges, garlic, thyme, and rosemary at the bottom of the crockpot.
  3. Mix all rub ingredients together until well combined.
  4. Pat the turkey breast dry and apply the rub all over it.
  5. Put the turkey breast on top of the onions in the crockpot and cover.
  6. Set the crockpot on Low for the appropriate time based on the turkey's weight.
  7. Check that the internal temperature reaches 165°F and then transfer the turkey to a pan.
  8. Broil the turkey under a broiler set to 500°F for about 5 minutes until the skin is crisp.
  9. Let the turkey rest for 10 minutes before slicing.
  10. To make the gravy, combine drippings with cornstarch and broth, whisking until thickened.
