Crockpot Bone-In Turkey Breast

Ingredients

Brine

  • ½ cup salt
  • 4-6 pounds bone-in turkey breast

Turkey

  • ¼ cup olive oil
  • 1 lemon zested
  • 1 ½ teaspoons fresh thyme
  • 1 ½ teaspoons onion powder
  • 1 ½ teaspoons garlic powder
  • ¼ teaspoon cayenne
  • ¼ teaspoon black pepper
  • 1 onion sliced
  • ¼ cup chicken broth

Gravy

  • ¼ cup butter
  • ¼ cup flour
  • to taste salt
  • to taste pepper

Instructions

  1. Mix salt with about a gallon of water until dissolved.
  2. Brine the turkey in the mixture in the fridge for at least 3 hours or overnight.
  3. Combine olive oil, lemon zest, thyme, onion powder, garlic powder, cayenne, and black pepper in a bowl.
  4. Remove the turkey from the brine, pat dry, and rub with the oil and seasoning mixture.
  5. Scatter sliced onion in the bottom of the crockpot.
  6. Place the turkey skin side up in the crockpot and add chicken broth.
  7. Cover and cook on low heat for 6 hours.
  8. Let the turkey rest for 20 minutes after cooking.
  9. Preheat the broiler and broil the turkey for 3 to 5 minutes for crispy skin.
  10. Strain the liquid from the slow cooker and add broth to reach two cups.
  11. Melt butter in a saucepan, add flour, and cook for 3 minutes while stirring.
  12. Whisk in the broth and simmer until thickened, seasoning with salt and pepper.
