Crockpot Bone-In Turkey Breast

Instructions
- Mix salt with about a gallon of water until dissolved.
- Brine the turkey in the mixture in the fridge for at least 3 hours or overnight.
- Combine olive oil, lemon zest, thyme, onion powder, garlic powder, cayenne, and black pepper in a bowl.
- Remove the turkey from the brine, pat dry, and rub with the oil and seasoning mixture.
- Scatter sliced onion in the bottom of the crockpot.
- Place the turkey skin side up in the crockpot and add chicken broth.
- Cover and cook on low heat for 6 hours.
- Let the turkey rest for 20 minutes after cooking.
- Preheat the broiler and broil the turkey for 3 to 5 minutes for crispy skin.
- Strain the liquid from the slow cooker and add broth to reach two cups.
- Melt butter in a saucepan, add flour, and cook for 3 minutes while stirring.
- Whisk in the broth and simmer until thickened, seasoning with salt and pepper.
