Ingredients

Dressing/Sauces

  • 2 teaspoons olive oil or broth
  • 1 teaspoon vinegar
  • ½ teaspoon dried basil
  • 2 tablespoons vegan ranch dressing
  • 2 teaspoons BBQ sauce
  • 2 tablespoons vegan teriyaki sauce
  • 2 tablespoons fresh salsa

Proteins

  • ¼ cup chickpeas
  • ¼ cup black beans
  • ¼ cup tofu
  • ¼ cup edamame

Veggies

  • 2 tablespoons red onion
  • 2 tablespoons cucumber
  • 2 tablespoons tomato
  • 1 cup spinach
  • ¼ cup corn
  • 2 tablespoons avocado

Grains

  • ¼ cup pasta
  • ¼ cup quinoa
  • ¼ cup rice

Greens

  • ½ cup lettuce
  • ½ cup cabbage

Instructions

  1. Prep all ingredients.
  2. Add the dressing at the bottom of each mason jar.
  3. Layer the proteins, grains, and veggies next.
  4. Top with greens.
  5. Store in the fridge until ready to eat.
  6. Shake the jar to mix the dressing before eating.
