Vegetarian Mason Jar Salad

The vinaigrette

Instructions
- Cook the rotini according to package instructions.
- In a medium pot, combine lentils and water, bring to a boil, then simmer until tender.
- Drain excess water from the lentils.
- Whisk together the vinaigrette ingredients in a bowl or shake them in a jar.
- In a wide-mouth jar, add 3 tablespoons of vinaigrette at the bottom.
- Layer the remaining ingredients in the following order: cherry tomatoes, diced onion, chickpeas, lentils, pasta, mozzarella pearls, and romaine lettuce.
- Close the jars and refrigerate for up to 5 days.
- Shake the jars before serving to combine the ingredients or pour into a bowl.
