Vegetarian Mason Jar Salad

Ingredients

The salad

  • 8 ounces dry rotini
  • ½ cup dry brown lentils
  • 1 ½ cups water or vegetable broth
  • 8 ounces cherry tomatoes
  • 1 cup diced red onion
  • 15 ounces canned chickpeas
  • 6 ounces mozzarella pearls
  • 1 large head romaine lettuce

The vinaigrette

  • ½ cup balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Cook the rotini according to package instructions.
  2. In a medium pot, combine lentils and water, bring to a boil, then simmer until tender.
  3. Drain excess water from the lentils.
  4. Whisk together the vinaigrette ingredients in a bowl or shake them in a jar.
  5. In a wide-mouth jar, add 3 tablespoons of vinaigrette at the bottom.
  6. Layer the remaining ingredients in the following order: cherry tomatoes, diced onion, chickpeas, lentils, pasta, mozzarella pearls, and romaine lettuce.
  7. Close the jars and refrigerate for up to 5 days.
  8. Shake the jars before serving to combine the ingredients or pour into a bowl.
