Ingredients

The salad

  • ¾ cup Balsamic Dressing
  • 1 cup Cherry Tomatoes, halved
  • 4 cups Baby Spinach
  • 1 cup Cucumber
  • 1 cup Feta Cheese, Crumbled
  • 1 cup Chickpeas, drained and rinsed
  • 1 cup Rotini Pasta, cooked
  • ½ cup Toasted Pine Nuts

The containers

  • 4 16 ounce Wide mouth Mason Jars

Instructions

  1. Toast the pine nuts in a dry skillet over medium heat, watching closely to prevent burning.
  2. Evenly distribute the ingredients over the 4 mason jars in the following order: dressing, pasta, tomatoes, cucumber, chickpeas, feta, nuts, and finally spinach.
  3. Store the jars in the fridge for up to 3 days.
  4. When ready to serve, dump the contents onto a plate and enjoy.
