Grilled Fajita Chicken

Ingredients

Fajita Seasoning

  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • 1 teaspoon cumin
  • ¼ teaspoon cocoa powder
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 2 large limes
  • ¼ cup water
  • 1 teaspoon corn starch

Chicken and Vegetables

  • 8 small chicken breasts
  • ¼ cup chopped green onion
  • 5 large bell peppers (mixed colors, cut into strips)
  • 2 small red onions (cut into strips)

Instructions

  1. Mix the fajita seasoning ingredients in a small pan and heat until hot, then let cool.
  2. Pour the seasoning over the chicken breasts, reserving some for the peppers and onions, and marinate for 30 minutes.
  3. Toss the peppers and onions with the remaining seasoning.
  4. Preheat the grill to high heat and grill the chicken for about 6 minutes on each side.
  5. Grill the onions and peppers until tender.
  6. Serve the chicken with the grilled peppers and onions.
