Ingredients

The Oats

  • 1 ½ cups Rolled Oats
  • 1 cup Cauliflower Rice
  • ¼ cup Maple Syrup
  • 1 ¼ cups Almond Milk
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Cinnamon
  • 1 scoop Collagen Peptides (optional)
  • ½ cup Grated Carrots
  • ½ cup Raisins

The Toppings

  • 2 tablespoons Coconut Yogurt
  • 2 tablespoons Shredded Coconut
  • ¼ cup Walnuts (chopped)

Instructions

  1. 1. Heat a saucepan over medium heat.
  2. 2. Add all oat ingredients and stir until the mixture simmers.
  3. 3. Cook for 7-9 minutes, stirring occasionally to prevent burning.
  4. 4. Once cooked, transfer oats to bowls and add desired toppings.
  5. 5. Store any leftovers in an airtight container in the fridge for up to one week.
