Fasolakia (Greek Green Bean Stew)

Ingredients

The stew

  • 4 cups green beans
  • 3 large tomatoes
  • 2 cups zucchini
  • 1 yellow onion chopped
  • 3 medium potatoes
  • cups water
  • 2 tablespoons tomato paste
  • 2 teaspoons brown sugar
  • ½ cup fresh mint
  • 1 ½ salt
  • ½ teaspoon pepper

For serving

  • to taste feta cheese
  • to taste tablespoons olive oil
  • to taste bread

Instructions

  1. Heat olive oil in a large pot over medium heat and add chopped onions, cooking until translucent.
  2. Add quartered potatoes, salt, and pepper, cooking until potatoes are golden brown.
  3. Stir in green beans and cook for about 5 minutes.
  4. Add chopped tomatoes, brown sugar, tomato paste, zucchini, and mint, stirring to combine.
  5. Pour in water and bring to a simmer, then reduce heat to low and cover, simmering for 45-50 minutes.
  6. Check occasionally to ensure there is enough water, adding more if necessary.
  7. Serve in bowls topped with feta cheese, a drizzle of olive oil, and bread.
