Instructions
- Heat olive oil in a large pot over medium heat and add chopped onions, cooking until translucent.
- Add quartered potatoes, salt, and pepper, cooking until potatoes are golden brown.
- Stir in green beans and cook for about 5 minutes.
- Add chopped tomatoes, brown sugar, tomato paste, zucchini, and mint, stirring to combine.
- Pour in water and bring to a simmer, then reduce heat to low and cover, simmering for 45-50 minutes.
- Check occasionally to ensure there is enough water, adding more if necessary.
- Serve in bowls topped with feta cheese, a drizzle of olive oil, and bread.
