Fasolakia (Greek Green Beans)

Ingredients

The vegetables

  • 1 cup chopped sweet or yellow onion
  • 1 ½ pounds Yukon gold potatoes, cut into 16ths
  • 2 pounds fresh string beans, ends trimmed
  • 1 cup chopped parsley
  • 1 pound fresh tomatoes, chopped
  • ½ cup water

The seasonings

  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • to taste none olive oil or broth

Instructions

  1. Wash and clean the string beans, cutting off the tips and breaking them in half.
  2. Sauté the onions with olive oil or broth until transparent, about 5 minutes.
  3. Add the potatoes and sauté for a few minutes.
  4. Add the tomatoes and sauté for a few more minutes.
  5. Add the beans, parsley, water, salt, and pepper.
  6. Bring to a simmer, cover, and cook for 20 minutes or until the beans are tender.
  7. If there is too much liquid, uncover and cook until the liquid evaporates and the sauce thickens.
  8. Serve and enjoy!
