Paleo Caesar Salad

Ingredients

The Salad

  • 2 hearts romaine lettuce
  • 1 large endive
  • ripe avocado

The Dressing

  • 1 large egg
  • 3 cloves garlic
  • ½ teaspoon anchovy paste
  • 1 teaspoon preserved lemons or zest of 1 lemon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon capers
  • ½ teaspoon freshly ground black pepper
  • cup avocado oil
  • 2 tablespoons bacon drippings

The 'Parmesan'

  • 2 tablespoons raw cashew pieces
  • 1 large garlic clove
  • ¼ teaspoon Himalayan salt

The Croutons

  • 2 tablespoons ghee
  • slices Olive and Rosemary Faux'caccia
  • 8 thick slices bacon

Instructions

  1. Cook the bacon to your liking and save the drippings for the dressing.
  2. For the dressing, combine all dressing ingredients in a tall jar and let them sit briefly.
  3. Insert an immersion blender into the jar and blend for 20 seconds without moving it, then blend more to combine thoroughly.
  4. For the faux-Parmesan, pulse cashew pieces, garlic, and salt in a food processor until it resembles grated parmesan.
  5. To make croutons, melt ghee in a skillet, dice the Faux'caccia, and fry until golden and crispy.
  6. In a large bowl, combine the lettuce, endive, avocado, and dressing, then toss to mix.
  7. Divide the salad onto plates, top with croutons, bacon, and faux-Parmesan, and serve immediately.
