Instructions
- Cook the bacon to your liking and save the drippings for the dressing.
- For the dressing, combine all dressing ingredients in a tall jar and let them sit briefly.
- Insert an immersion blender into the jar and blend for 20 seconds without moving it, then blend more to combine thoroughly.
- For the faux-Parmesan, pulse cashew pieces, garlic, and salt in a food processor until it resembles grated parmesan.
- To make croutons, melt ghee in a skillet, dice the Faux'caccia, and fry until golden and crispy.
- In a large bowl, combine the lettuce, endive, avocado, and dressing, then toss to mix.
- Divide the salad onto plates, top with croutons, bacon, and faux-Parmesan, and serve immediately.
