Avocado Caesar Salad

Ingredients

  • 1 whole ripe avocado, pitted (about ½ cup mashed)
  • 5 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon raw apple cider vinegar
  • ¾ cup water
  • 1 teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • 2 tablespoons nutritional yeast

Instructions

  1. Blend all dressing ingredients in a high-speed blender until smooth.
  2. Pour the dressing over chopped Romaine lettuce and toss to coat.
  3. Serve with roasted potatoes as croutons if desired.
  4. Store leftover dressing in the fridge for up to 3 days.
