Ingredients

The base

  • 1 medium sweet potato
  • 1 cup oatmeal
  • 2 cups milk
  • 1 cup water

The flavorings

  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons sweetener or sugar

Instructions

  1. Spray the slow cooker with cooking oil.
  2. Add all ingredients to the slow cooker.
  3. Cook rolled oats for 2 ½ to 3 hours on High or 5 to 6 hours on Low.
  4. Cook steel-cut oats for 3 to 4 hours on High or 6 to 8 hours on Low.
  5. Mash the sweet potatoes after cooking.
  6. Adjust sweetness and consistency with additional milk or water as needed.
  7. For stovetop, use cooked, mashed sweet potatoes and follow oatmeal packaging instructions, adding flavorings after cooking.
