Salmon Confit

The salmon and seasoning

The cooking oil

Instructions
- Combine lemon zest, chopped dill, coarse sea salt, and maple sugar flakes in a shallow bowl and mix well.
- Rub the salmon fillets with the spice mixture on both sides and refrigerate uncovered for 30 to 45 minutes.
- Rinse the salmon fillets under cold running water and pat them dry.
- Place the salmon in an ovenproof dish and cover completely with olive oil.
- Preheat the oven to 170°F and place the salmon on the middle rack.
- Cook for 20 minutes, then carefully lift the salmon out of the oil and let it drain.
- Serve garnished with micro-greens and homemade mayo, if desired.
