Ingredients

The salmon and seasoning

  • 2 fillets skinless salmon
  • 1 lemon grated zest
  • 2 tbsp chopped fresh dill
  • 3 tbsp coarse sea salt
  • 2 tbsp pure maple sugar flakes

The cooking oil

  • ¾ cup extra-virgin olive oil
  • 1 cup extra-virgin olive oil

Instructions

  1. Combine lemon zest, chopped dill, coarse sea salt, and maple sugar flakes in a shallow bowl and mix well.
  2. Rub the salmon fillets with the spice mixture on both sides and refrigerate uncovered for 30 to 45 minutes.
  3. Rinse the salmon fillets under cold running water and pat them dry.
  4. Place the salmon in an ovenproof dish and cover completely with olive oil.
  5. Preheat the oven to 170°F and place the salmon on the middle rack.
  6. Cook for 20 minutes, then carefully lift the salmon out of the oil and let it drain.
  7. Serve garnished with micro-greens and homemade mayo, if desired.
