Instructions
- Make the ganache by heating cream and pouring it over chopped chocolate, then stirring until combined. Set aside half to thicken for swirling.
- Preheat the oven to 350°F (177°C) and grease a 10-inch Bundt pan.
- Mash the bananas and set aside.
- Whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Beat the butter and sugars until creamy, then add eggs, vanilla, and bananas.
- Gradually mix in the dry ingredients and buttermilk alternately until just combined.
- Pour ⅓ of the batter into the pan, drizzle half of the ganache, and swirl. Repeat with another layer of batter and ganache, then top with remaining batter and swirl again.
- Bake for 60-75 minutes or until a toothpick comes out clean.
- Cool in the pan for 2 hours, then invert onto a wire rack to cool completely.
- Reheat the remaining ganache to drizzle over the cooled cake before serving.
