Ingredients

The filling

  • 8 pieces hard-cooked eggs, peeled
  • 1 medium ripe avocado
  • 3 slices crisp-cooked bacon
  • ½ large lemon juice
  • ¼ cup chopped fresh herbs (cilantro, parsley, or chives)
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper

For garnish

  • 1 dash paprika or cracked black pepper (optional)

Instructions

  1. Cut each peeled hard-cooked egg in half.
  2. In a food processor, combine the yolks from 12 egg halves, avocado, 2 pieces of crumbled bacon, lemon juice, herbs, salt, and pepper; process until smooth.
  3. Using a piping bag or spoon, fill the egg white halves with the mixture.
  4. Break the remaining piece of bacon into small pieces and place one on each egg half as a garnish. Optionally, sprinkle with paprika or additional herbs.
