Ingredients

The sandwich

  • 2 slices sturdy bread (sourdough or rye)
  • 2 slices Swiss cheese
  • 1 cup leftover corned beef
  • ΒΌ cup coleslaw

The spread

  • 1 tablespoon dijon mustard
  • 1 tablespoon mayonnaise

For cooking

  • 1 tablespoon olive oil

Instructions

  1. Mix dijon mustard and mayonnaise in a 1:1 ratio to create the spread.
  2. Spread the mixture on both slices of bread and place Swiss cheese on one or both slices.
  3. Add corned beef to the sandwich, then close it.
  4. Drizzle olive oil on both sides of the sandwich.
  5. Toast the sandwich using a panini press, broiler, skillet, or microwave until the cheese is melted and the bread is toasted.
  6. After toasting, add coleslaw to the sandwich.
  7. Serve immediately with a dill pickle and kettle chips.
