fresh mozzarella

extra virgin olive oil
Instructions
- Preheat the oven to 400°F and bring a large pot of salted water to a boil.
- Cook the pasta until barely al dente, drain, and toss with olive oil.
- Make breadcrumbs from the bread slices and mix with ground turkey, sausage, egg, salt, Parmesan, and parsley.
- Form the mixture into approximately 28 meatballs.
- Brown the meatballs in a skillet with olive oil, then remove them from the skillet.
- In the same skillet, cook the onion, garlic, oregano, and red pepper flakes, then add the pasta sauce and spinach.
- Return the meatballs to the skillet and let them simmer until cooked through.
- Add the drained pasta and half of the mozzarella to the skillet, stir to combine, and top with remaining mozzarella.
- Bake for 15-20 minutes until the cheese is melted and bubbly, then let rest before serving.
