Meatball Casserole

Ingredients

The meatballs

  • 1 pound extra lean ground turkey
  • 8 ounces spicy Italian turkey sausage
  • 1 large egg
  • 1 teaspoon kosher salt
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 2-3 slices whole wheat bread

The sauce and pasta

  • 6 ounces whole wheat pasta
  • 32 ounces prepared red pasta sauce
  • 10 ounces frozen chopped spinach
  • 1 small yellow onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes

The cheese

  • 8 ounces fresh mozzarella

The oil

  • 4 tablespoons extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F and bring a large pot of salted water to a boil.
  2. Cook the pasta until barely al dente, drain, and toss with olive oil.
  3. Make breadcrumbs from the bread slices and mix with ground turkey, sausage, egg, salt, Parmesan, and parsley.
  4. Form the mixture into approximately 28 meatballs.
  5. Brown the meatballs in a skillet with olive oil, then remove them from the skillet.
  6. In the same skillet, cook the onion, garlic, oregano, and red pepper flakes, then add the pasta sauce and spinach.
  7. Return the meatballs to the skillet and let them simmer until cooked through.
  8. Add the drained pasta and half of the mozzarella to the skillet, stir to combine, and top with remaining mozzarella.
  9. Bake for 15-20 minutes until the cheese is melted and bubbly, then let rest before serving.
