Ingredients

  • 2 teaspoons vegan butter or olive oil
  • ½ cup red onion, chopped
  • 1 cup raw cashews, soaked overnight or boiled
  • ¼ cup pasta water or filtered water
  • 1 ½ cups unsweetened almond milk
  • 4 cloves roasted garlic
  • 2 tablespoons nutritional yeast
  • ½ teaspoon sea salt
  • 2 tablespoons vegan parmesan cheese
  • 1 tablespoon lime juice

Instructions

  1. Heat the vegan butter or olive oil in a pan over medium-high heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Remove the onions from the pan and place them in a blender.
  4. Add the soaked cashews, pasta water, almond milk, roasted garlic, nutritional yeast, sea salt, vegan parmesan cheese, and lime juice to the blender.
  5. Blend until completely creamy, adjusting seasoning if necessary.
  6. Serve immediately or store in an airtight jar.
