Instructions
- Heat olive oil in a skillet over medium-high heat and sauté the onion until soft and translucent, about 5 to 8 minutes.
- Add minced garlic and stir for about 1 minute until fragrant, then remove from heat.
- In a high-speed blender, combine cashews, water, lemon juice, vinegar, salt, and pepper.
- Add the sautéed onions and garlic to the blender and blend until smooth.
- Serve the sauce over cooked pasta, adjusting seasoning to taste.
