Vegan Alfredo Sauce

Ingredients

The sauce

  • 1 ½ cups raw cashews
  • ¾-1 cup water or unsweetened almond milk
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons nutritional yeast
  • 1-1 ½ teaspoons salt
  • 1 teaspoon dried basil
  • 1 teaspoon tahini

The pasta

  • ¾ pound fettuccine or other pasta

Garnish

  • to taste freshly chopped parsley

Instructions

  1. Soak the raw cashews in hot water for 30-60 minutes.
  2. Drain the cashews and add them to a high-speed blender with the remaining ingredients.
  3. Blend on high speed until smooth, about 90 seconds.
  4. Toss the sauce with hot, cooked pasta and serve immediately.
