Ingredients

  • 2 teaspoons vegan butter or olive oil
  • ½ cup raw cashews, soaked
  • ¼ cup pasta water or filtered water
  • cups unsweetened almond milk
  • 4 cloves roasted garlic
  • 2 tablespoons nutritional yeast
  • ½ teaspoon sea salt
  • 2 tablespoons vegan parmesan cheese
  • 1 tablespoon lime juice

Instructions

  1. 1. Heat the vegan butter or olive oil in a pan over medium-high heat and cook the chopped onion until translucent.
  2. 2. Remove the onions from the pan and add them to a blender with the soaked cashews, pasta water, almond milk, roasted garlic, nutritional yeast, sea salt, vegan parmesan cheese, and lime juice.
  3. 3. Blend until completely creamy, adjusting salt or vegan parmesan cheese to taste.
  4. 4. Serve immediately or store in an airtight jar for later use.
