Ingredients

Filling

  • 1 can sardines in chili tomato sauce
  • ½ medium onion, chopped
  • ½ teaspoon parsley
  • ¼ teaspoon curry powder

Dough

  • 1 cup plus 2 tablespoons water
  • teaspoon yeast
  • tablespoons sugar
  • ½ tablespoon salt
  • 4 cups all-purpose flour
  • 5 oz unsalted butter or margarine

Instructions

  1. Drain half of the tomato sauce from the sardines and simmer with onions and curry powder until the liquid evaporates, then add parsley and let cool.
  2. In a bowl, combine warm water and yeast, and let sit for 5 minutes.
  3. Mix flour, sugar, and salt in a stand mixer or by hand, then add margarine and mix until combined.
  4. Add the yeast mixture to the flour mixture and mix for about a minute.
  5. Knead the dough on a floured surface until smooth, then cover and let rise for 30 to 45 minutes.
  6. Divide the dough into 1-2 ounce pieces, roll each into a circle, and place a teaspoon of fish mixture in the center before rolling it up.
  7. Heat oil in a skillet to medium-high heat and fry the fish pies in batches until golden brown, about 5 minutes.
  8. Remove from oil and drain on paper towels, then serve warm or at room temperature.
