African Fish Roll

Instructions
- Drain half of the tomato sauce from the sardines and simmer with onions and curry powder until the liquid evaporates, then add parsley and let cool.
- In a bowl, combine warm water and yeast, and let sit for 5 minutes.
- Mix flour, sugar, and salt in a stand mixer or by hand, then add margarine and mix until combined.
- Add the yeast mixture to the flour mixture and mix for about a minute.
- Knead the dough on a floured surface until smooth, then cover and let rise for 30 to 45 minutes.
- Divide the dough into 1-2 ounce pieces, roll each into a circle, and place a teaspoon of fish mixture in the center before rolling it up.
- Heat oil in a skillet to medium-high heat and fry the fish pies in batches until golden brown, about 5 minutes.
- Remove from oil and drain on paper towels, then serve warm or at room temperature.
