Roasted Tomatillo and Green Olive Salsa

Instructions
- Preheat the oven to 475°F.
- Spread tomatillos, garlic, and jalapenos on a baking sheet and coat with olive oil.
- Roast for 15 minutes until tomatillos are browned and blistered.
- Remove from the oven and place in a food processor or blender with olives, cilantro, lime juice, and sugar.
- Pulse 5-7 times, then add water and pulse another 4-5 times to mix.
- Serve in a bowl with chips or as a topping on eggs, chicken, or meat.
