Ingredients

  • 1 ½ pounds tomatillos, husked
  • 6 cloves garlic
  • 2 peppers jalapeno
  • 1 tablespoon olive oil
  • 1 cup green olives
  • 1 cup cilantro
  • 1 unit lime, juiced
  • 1 teaspoon sugar
  • ½ teaspoon kosher salt
  • cup water

Instructions

  1. Preheat the oven to 475°F.
  2. Spread tomatillos, garlic, and jalapenos on a baking sheet and coat with olive oil.
  3. Roast for 15 minutes until tomatillos are browned and blistered.
  4. Remove from the oven and place in a food processor or blender with olives, cilantro, lime juice, and sugar.
  5. Pulse 5-7 times, then add water and pulse another 4-5 times to mix.
  6. Serve in a bowl with chips or as a topping on eggs, chicken, or meat.
