Classic Chimichurri Sauce

Ingredients

  • 1 cup packed fresh flat-leaf parsley leaves
  • 4 medium cloves garlic
  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • ½ teaspoon fine sea salt
  • ½ teaspoon red pepper flakes
  • ½ cup finely chopped red onion

Instructions

  1. Combine parsley and garlic in a food processor and chop finely.
  2. Add olive oil, vinegar, salt, and red pepper flakes, then process briefly.
  3. Transfer to a jar or bowl and whisk in the red onion.
  4. Let the sauce rest for 10 minutes to meld flavors.
  5. Taste and adjust salt or red pepper flakes if needed.
  6. Store covered in the refrigerator for 3 to 4 days.
