Ingredients

The filling

  • 1 15 oz whole milk ricotta
  • ½ cup heavy cream
  • cup powdered sugar
  • ½ tsp vanilla extract
  • tsp ground cinnamon
  • ½ cup mini semi-sweet chocolate chips

The cones

  • 10 pieces sugar cones

Optional garnishes

  • 4 oz semi-sweet chocolate, chopped
  • to taste chopped unsalted pistachios
  • to taste fresh raspberries

Instructions

  1. Strain the ricotta overnight.
  2. Melt the chocolate if dipping cones, then dip and let set.
  3. Whip the heavy cream until stiff peaks form.
  4. Combine strained ricotta, powdered sugar, vanilla, and cinnamon in a bowl and whip to blend.
  5. Fold the whipped cream and chocolate chips into the ricotta mixture.
  6. Transfer the mixture to a piping bag and fill the cones.
  7. Garnish with chocolate chips, pistachios, and raspberries if desired.
