Easy Healthy Taco Rice Bowl

Ingredients

  • 1 lb ground turkey
  • 3 tbsp taco seasoning
  • 6 cups salad greens, roughly chopped
  • 2 cups rice, cooked
  • 1 cup black beans
  • 1 avocado sliced
  • 2 cups cherry tomatoes, quartered
  • 1 cup shredded cheese (Monterey Jack or cheddar)
  • 1/2 lime juiced
  • 2-3 tbsp cilantro, chopped
  • to taste Greek yogurt taco sauce
  • to taste salsa
  • to taste sour cream
  • to taste black pepper
  • to taste salt

Instructions

  1. 1. Heat a large non-stick skillet on medium heat and brown the ground turkey for about 10-12 minutes, adding taco seasoning halfway through.
  2. 2. Prepare cilantro lime rice by mixing cooked rice with lime juice, chopped cilantro, salt, and pepper.
  3. 3. In each serving bowl, layer 4 oz of cooked ground turkey, 1/2 cup of cilantro lime rice, 1/4 sliced avocado, 1/4 cup black beans, 1/4 cup shredded cheese, and 1/2 cup quartered cherry tomatoes.
  4. 4. Top each bowl with Greek yogurt taco sauce, salsa, sour cream, or your favorite creamy dressing.
  5. 5. Combine well and enjoy, adding more cilantro and lime juice to taste.
