Ingredients

The filling

  • 1 pound ground turkey
  • ½ cup chopped onion
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 ½ teaspoons cumin
  • 1 8-ounce can tomato sauce
  • ¼ cup low-sodium chicken broth or water
  • 1 15-ounce can black or pinto beans, rinsed and drained
  • 2 cups cooked brown rice
  • 1 tablespoon fresh lime juice
  • to taste chopped cilantro
  • about 2 cups shredded cheddar and/or Monterey Jack cheese

The wraps

  • 8 burrito-sized, 10-inch flour tortillas

Taco toppings

  • various taco toppings like tomatoes, sour cream, salsa, olives, lettuce, avocados

Instructions

  1. Cook the ground turkey, onion, salt, and pepper in a skillet over medium heat until fully cooked, breaking the meat into small pieces.
  2. Drain any excess grease if necessary.
  3. Add the chili powder, garlic powder, oregano, paprika, and cumin, stirring well to combine.
  4. Stir in the tomato sauce, chicken broth, and beans, then simmer for 5-6 minutes.
  5. Mix in the cooked rice, lime juice, and cilantro, cooking until hot and bubbling.
  6. Fill each tortilla with the meat and rice mixture, top with cheese, and roll up burrito-style.
  7. Serve immediately with desired taco toppings.
