Ingredients

The scones

  • ½ cup butter
  • 2 cups all purpose flour
  • 1 cup whole wheat pastry flour
  • ½ teaspoon cinnamon
  • ½ teaspoon ground cloves
  • ¾ teaspoon ground ginger
  • ¾ teaspoon salt
  • 1 tablespoon baking powder
  • 2 units eggs
  • cup real maple syrup
  • cup molasses
  • cup milk
  • ½ cup egg whites
  • as needed cup additional flour

The glaze

  • 2 tablespoons butter
  • cups powdered sugar
  • 1 teaspoon vanilla
  • 1 tablespoon maple syrup
  • 1–2 tablespoons water

Instructions

  1. Chill the butter in the freezer while preparing the other ingredients.
  2. Combine the flours, cinnamon, cloves, ginger, salt, and baking powder in a bowl.
  3. In another bowl, whisk together the eggs, maple syrup, molasses, and milk.
  4. Grate the chilled butter and mix it into the flour mixture until crumbly.
  5. Add the wet ingredients to the flour mixture and stir until just combined.
  6. Transfer the dough to a floured surface and shape it into a thick circle, then chill in the freezer for 15 minutes.
  7. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  8. Remove the dough from the freezer, reshape if necessary, and cut into wedges.
  9. Brush the tops with egg whites for shine.
  10. Bake for 15 minutes or until golden brown.
  11. For the glaze, melt the butter in a saucepan, then mix in the powdered sugar, vanilla, and maple syrup until smooth, adding water as needed.
  12. Drizzle the glaze over the warm scones.
