Ingredients

The popcorn

  • ½ cup Bob's Red Mill white popcorn kernels
  • 2 tbsp coconut oil

The popcorn balls

  • 4 cups popped popcorn
  • 2 tbsp chia seeds
  • 2 tbsp almond meal
  • 2 tbsp raw cacao powder
  • ¼ tsp sea salt
  • ½ cup sunbutter (or nut butter of choice)
  • ¼ cup pure maple syrup

Instructions

  1. Melt coconut oil in a pot over medium-high heat and add two popcorn kernels.
  2. Cover the pot and wait for the kernels to pop, then add the rest of the kernels and shake the pot continuously until popping slows down.
  3. Remove the pot from heat once popping stops.
  4. Place popped popcorn in a large bowl and add chia seeds, almond meal, cacao powder, and salt, mixing well.
  5. In a separate bowl, combine sunbutter and maple syrup, microwaving for about 20 seconds to mix.
  6. Pour the sunbutter mixture over the popcorn mixture and mix with your hands until well combined.
  7. Wet your hands and form the mixture into golf ball-sized balls, ensuring they stick together.
  8. Place the balls on a parchment-lined plate and refrigerate for 20 minutes to set.
