Grilled Shishito Peppers with Lemon and Cilantro

Ingredients

The peppers

  • 1 pound fresh shishito peppers

The marinade

  • 1 whole lemon, juiced
  • 1 tablespoon extra virgin olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • ¼ cup fresh cilantro, coarsely chopped
  • a pinch sea salt (optional)

Instructions

  1. Clean the shishito peppers and place them in a large bowl.
  2. Whisk together lemon juice, olive oil, garlic, and smoked paprika in a small bowl.
  3. Drizzle the marinade over the peppers and toss to coat.
  4. Refrigerate for about 1 hour before grilling.
  5. Preheat the grill to medium-high and place the peppers on a grilling basket.
  6. Grill the peppers for about 8 minutes, turning frequently until browned on all sides.
  7. Sprinkle with fresh chopped cilantro and serve immediately.
