Paleo Chestnut Fruit Cake

Ingredients

Dry Ingredients

  • cups almond flour
  • 1 cup coconut flour
  • ½ cup tapioca flour
  • 2 tsp baking soda
  • 1 tsp cream of tartar
  • ½ tsp Himalayan or fine sea salt
  • 1 tbsp ground cinnamon
  • ¼ tsp ground clove
  • 1 tsp ground ginger
  • ½ tsp freshly grated nutmeg

Fruits and Nuts

  • 1 150g bag roasted and peeled chestnuts, coarsely chopped
  • ½ cup walnuts, chopped
  • ½ cup pecans, chopped
  • ½ cup dried apricots, chopped
  • ½ cup dates, chopped
  • ½ cup raisins

Wet Ingredients

  • 1 435g can unsweetened chestnut puree
  • ½ cup date paste
  • ¼ cup blackstrap molasses
  • 1 cup unsweetened applesauce
  • ½ cup full fat coconut milk
  • ¾ cup water
  • 2 tbsp apple cider vinegar
  • 4 units eggs
  • 1 tsp pure vanilla extract
  • 1 tsp pure almond extract

Coconut Glaze

  • 1 cup unsweetened shredded coconut
  • ½ cup almond flour
  • ¼ cup unpasteurized honey
  • 1 tsp pure vanilla extract
  • Few drops units pure almond extract

Garnish

  • 6 units dried apricots, whole
  • 6 units pitted dates, coarsely chopped
  • 2 tbsp raisins
  • 3 units walnut halves, chopped
  • 6 units pecan halves
  • ¼ cup rum (optional, for soaking the dried fruits)

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9” springform pan with lard or ghee.
  3. Combine all dry ingredients in a food processor and mix well.
  4. Transfer the dry mixture to a large bowl and add the chopped fruits and nuts, mixing thoroughly.
  5. Blend all wet ingredients in the food processor until smooth.
  6. Pour the wet mixture into the dry ingredients and mix gently until combined.
  7. Transfer the batter to the prepared pan and bake for 70-75 minutes until a toothpick comes out clean.
  8. Cool completely on a rack before removing from the pan.
  9. For the glaze, mix all glaze ingredients in a bowl until well combined.
  10. Place the cake on a plate and pour the glaze over it, spreading evenly.
  11. Garnish with the reserved dried fruits and nuts.
