Paleo Fruitcake

Instructions
- 1. Combine almond flour, salt, and baking soda in a large bowl.
- 2. Stir in the dried fruit and nuts.
- 3. In a medium bowl, mix together eggs, coconut oil, coconut sugar, vanilla, and citrus zest.
- 4. Combine the wet ingredients with the dry ingredients.
- 5. Scoop the batter into 2 greased mini loaf pans.
- 6. Bake at 350°F for 20-30 minutes.
- 7. Cool and serve.
