Instructions
- Preheat the oven to 350°F and prepare a muffin pan with baking spray and line with ham.
- Sauté onions and garlic in olive oil until translucent, then add sherry and cook until the alcohol smell dissipates.
- Add red wine vinegar and cream cheese to the onion mixture, stirring until melted and combined.
- In a bowl, mix spinach, eggs, feta, mozzarella, Dijon mustard, garlic salt, salt, and pepper.
- Combine the onion mixture with the other ingredients using a hand mixer until blended.
- Divide the mixture evenly among the ham-lined muffin wells.
- Bake for 30 minutes or until cooked through, then cool and store as desired.
